I found this recipe recently as a Fun Food recipe for 2-3 year olds from Annabel Karmel. It would work well for lunch (at home or at kindy or even a picnic) or for dinner, so I thought I would share:
These meatballs are easy to prepare and delicious (the apple keep stem wonderfully moist). They are good on their own or served with spaghetti and special tomato sauce.
Ingredients:
500g lean minced beef
1 onion, peeled and finely chopped
1 T chopped fresh parsley
1 chicken stock cube, dissolved in 2 T hot water
1 small apple, peeled and grated
1/2 t Worcestershire auce
pinch of brown sugar
salt and freshly ground black pepper
plain flour for coating
vegetable oil for frying
Method:
In a mixing bowl, combine all the ingredients, except for the flour and vegetable oil. Use your hands to form the mixture into about 24 walnut-sized balls. Spread the flour on a plate and use to coat the meatballs.
Warm the oil in a frying pan, add the meatballs and fry over a high heat for about 3 minutes, until browned on all sides. Lower the heat a little and fry for 12 minutes, more until cooked through.
