Flax and Oatmeal Bars for Breastfeeding Mums or Hungry Kids

I’ve been hunting around for some nice healthy recipes to share with you, but this one can’t wait.  It’s a great recipe to keep on hand when you are breastfeeding, and for a healthy snack for older kids.  This one could even make a great breakfast – especially for those days when you have to eat on the run!

It’s from Dr Joel Fuhrman, who has plenty of nutrient-dense eating ideas.

Flax and Oatmeal Bars

1/2 cup dried apples

1/2 cup raisins

1/2 cup dates

1 1/2 cups vanilla soy milk

3T ground flax seeds

1T raw cashew butter or peanut butter

 

Soak apples, raisins and dates in half the soy milk in refrigerator overnight.  Mix oats and ground flax seeds together and soak likewise with thte other half of the soy milk in refrigerator overnight.  In the morning, blend the dried fruit mix in a blender or food processor with the nut butter.  Mix the blended fruit with the oat/flax seed mixture and roll into logs or spread on a baking tray.  Cook in oven on low heat (100 degrees) for 30 minutes to dehydrate.

The oats, flax seeds and nuts are all great for breastmilk production, and these bars are a great snack when you are breastfeeding a newborn – grab your bar, and a bottle of water n one hand, and baby in the other – now you’re good to snuggle up for half an hour or more!
